Fresh Spring Rolls

Use the peanut sauce for dipping.  Can also use other veggies that are firm like jicama.

Ingredients

  • Rice paper wrapper

  • Lettuce (romaine or red leaf)

  • Shredded red cabbage

  • Shredded carrots

  • Cucumber sticks 

  • Rice noodles, skinny (cooked per directions and cooled)

  • Mint or cilantro leaves

Instructions

  1. Wet wrapper in water. 

  2. Spread out on wet board. 

  3. Lay lettuce, noodles, veggies, mint or cilantro. 

  4. Wrap tightly, tucking edges. 

  5. Serve with Peanut Sauce
