Vegan Nacho Cheese Sauce

This is a great sauce but a work in progress.  I am trying to get close to Taco Bell’s nacho cheese sauce.  


Ingredients

  •          1 cup potato, peeled & cubed

  •            ½ cup carrot, peeled & cubed

  •            ½ tsp salt 

  •            ½ c raw unsalted cashews, softened in boiling water 10 min (or soaked overnight)

  • 3T oil (canola or safflower)

  • ½ cup non-dairy milk, unsweetened

  • 2 tsp lemon or lime juice

  • 1 tsp garlic powder

  • 1 tsp onion power

  • 3 Tbsp nutritional yeast

  • ½ tsp paprika (optional for more color)

  • 1 Tbsp jalapeno pepper, seeds & ribs removed, finely chopped (optional)



Instructions

  1. Add potato, carrot, & salt to 2 cups boiling water.  Boil 10 minutes or until soft.

2. Drain potatoes and carrots.  Blend everything in a blender until smooth.  This sauce will keep well if refrigerated.
