Vegan Nacho Cheese Sauce
This is a great sauce but a work in progress. I am trying to get close to Taco Bell’s nacho cheese sauce.
Ingredients
1 cup potato, peeled & cubed
½ cup carrot, peeled & cubed
½ tsp salt
½ c raw unsalted cashews, softened in boiling water 10 min (or soaked overnight)
3T oil (canola or safflower)
½ cup non-dairy milk, unsweetened
2 tsp lemon or lime juice
1 tsp garlic powder
1 tsp onion power
3 Tbsp nutritional yeast
½ tsp paprika (optional for more color)
1 Tbsp jalapeno pepper, seeds & ribs removed, finely chopped (optional)
Instructions
Add potato, carrot, & salt to 2 cups boiling water. Boil 10 minutes or until soft.
2. Drain potatoes and carrots. Blend everything in a blender until smooth. This sauce will keep well if refrigerated.
