Egg, Cheese, and Sausage Sandwich

This is a fun recipe which is doable as vegan because of the new products available in the stores today. Over the counter, the only breakfast sandwich I know of is sold by Pete’s coffee. Its their plant-based breakfast sandwich and this is a copy of that recipe. This recipe is expandable for however many people you want to serve.

Ingredients

1 bagel per person, I use organic bagels with everything on them (not sweet bagels)

1 frozen egg substitute, I use Just Egg plant-based “folded” frozen egg product

1 piece of vegan cheese, usually a cheddar type or american. Any will do

1 or more spicy vegan sausage patties; I use Impossible spicy or Beyond spicy sausage.

Directions

Cook sausage according to package directions. We usually cook them in a skillet, then cook the folded Just Egg in the oil from the sausage.

Lightly toast the bagel. Place a piece of vegan cheese on top and put in the microwave for 20 seconds to melt. Top that with the Just Egg, sausage, and the op to the bagel. Enjoy!
