Bob’s 10-minute Tacos
This quick and easy recipe is surprisingly tasty. It can be modified many ways but here is the way my husband, Bob, makes them. There are many options to add to your tacos if you like. I listed some of them at the end. This recipe makes 3-4 tacos.
Ingredients
3-4 hard Taco shells (you could also use soft if you prefer)
1 4-oz Impossible Burger patty
1 Tbs Taco seasoning
1/4 cup of water
1/8 c shredded vegan cheese (I use a cheddar version) per taco
Handful of shredded lettuce or salad mix per taco
2 Tbs salsa per taco (more or less to taste)
Directions
Brown burger patty in a skillet (can cook from frozen or thawed). Add taco seasoning and water. Break up burger patty. Stir to mix. Let water boil off.
Put cheese in taco shell. Place in the microwave for 20 seconds to melt cheese.
Add 1/3 meat mixture (or 1/4 for 4 tacos), lettuce, and salsa. Voila, you are done!
*Other optional ingredients are rice, beans, avocado, onions, olives, and tomatoes.
