Vegan Green Bean Casserole
This is a vegan version of the classic holiday green bean casserole. This updated version is much healthier and tastier than the original. This recipe comes from Nora Cooks with a little modification on my part. Makes 10 servings.
Ingredients
2 lbs fresh or frozen green beans (I used frozen organic)
2 Tbs olive oil
8 oz sliced mushrooms (I used cremini)
5 cloves garlic, minced
1 cup vegetable broth (I use Better Than Bullion)
1/4 cup all purpose flour
1/2 cup unsweetened vegan creamer (I used cocnut/almond)
1 1/2 cups unsweetened, unflavored soy, almond, or cashew milk
1/2 tsp salt, or to taste (I added more)
6 ounces french fried onions (French’s or Trader Joes)
Instructions
Cook the beans partially. Trim the ends if using fresh beans and put in boiling water for 5 minutes. If using frozen, cook for 1/2 the recommended time on the packaged instructions.
Preheat oven to 400 degree’s F. She recommends a 10 inch cast iron skillet. I used a casserole dish. Lightly grease whichever you use.
Saute the mushrooms in the oil for 4 minutes. I actually chopped up the mushrooms a little more. Add the garlic. Saute a minute more.
Sprinkle the flour on top of the mushroom and stir quickly. Slowly add the vegetable broth and continue stirring until the mixture thickens. Add the vegan creamer, then the non-dairy milk, stirring frequenrtly for about 5 minutes until thick and creamy. Add salt to taste. Remove from heat.
Add green beans and 1/3 cups of fried onions.. If not using a skillet, put all ingredients in the casserole dish. Top with rest of french fried onions (I didn’t use as many as she recommended because its too thick a topping in a casserole dish).
Cook in the oven for 15-20 minutes, until the onions are crispy but not burnt. Serve immediately.
To prepare ahead of time, follow recipe up to placing the green beans and mushroom mixture and 1/3 cup of fried onions in the casserole. Cover and refrigerate. When ready to serve, remove cover and bake for 30 minutes (or until hot in the middle). Top with rest of french fried onions. Cook 5 more minutes, then serve.
