Falafel Wraps

This is a great lunch sandwich.  The falafels can be made ahead of time.  I purchase a falafel mix – Tarazi Falafel Mix

Ingredients

  • 10 inch tortillas

  • Hummus

  • Romaine lettuce

  • 2-3 falafels, halved

  • Chopped tomato

  • Chopped cucumber

  • Chopped dill pickle

  • Sliced avocado (optional)

  • Tahini sauce (see recipe below)

Instructions

  1. Spread a thin layer of hummus on the tortilla. 

  2. Lay romaine lettuce in the center, then lay the falafels down the center on top of the lettuce. 

  3. Put tomato, pickles, cucumber, and avocado along the sides. 

  4. Drizzle with tahini sauce. 

  5. Wrap tightly, tucking up the bottom.  Heat in a hot skillet on both sides.  Cut in half and serve with more Tahini sauce for dipping.


Tahini Sauce

  • 1/3 cup tahini

  • 1/3 – ½ cup unsweetened coconut yogurt

  • 3 Tbs lemon juice

  • 1 clove garlic, minced

  • Salt & pepper

-Mix all ingredients together.  Will keep for at least a week in the refrigerator.
