Corn Chowder

I love this recipe. It is fairly new to me and comes from Nora Taylor with a little variation from me. It is hearty and delicious. It serves 6.

Ingredients

  • 1-2 Tbsp olive oil

  • 1 medium onion, diced

  • 1 medium red bell pepper, chopped small

  • 5 cups vegetable broth (I use Better than Bullion most of the time)

  • 1/2 tsp smoked paprika

  • 4+ cups corn, fresh or frozen

  • 2 lbs yukon gold potatoes, chopped, about 4 medium potatoes

  • 1 cup raw cashews

  • 1/2 cup nutritional yeast

  • 1 tsp salt

  • pepper to taste

Instructions

  1. In a large soup pot, saute the onion in olive oil for 3-4 minutes stirring frequently. Add the red bell pepper and cook for 1 more minute.

  2. Pour in the vegetable broth, smoked paprika, corn, and potatoes. Stir. Bring to a boil then simmer for about 10 minutes or until the potatoes are fork tender.

  3. Blend in a high speed blender the cashews, nutritional yeast, and 2 cups of hot soup until very smooth. Add back to the pot and stir. Add salt and pepper to taste. Serve and enjoy!
