Chickpea Salad Sandwich

This is a great recipe for a chicken or tuna salad like sandwich filling. Makes enough for 6 sandwiches.

Ingredients

  • 1 15-oz can of chickpeas, drained

  • 3 Tbs vegan Mayonnaise

  • 2 tsp mustard

  • 3 Tbs sweet pickle relish

  • 1/2 medium onion, diced

  • 2 stalks celery, diced

Directions

  1. Slightly mash the chickpeas. Add all ingredients. Stir until fully combined. Enjoy!

  2. *For a chickpea salad sandwich, add vegan mayonnaise to 2 pieces of whole wheat bread, pile on the salad to the thickness preferred. Add lettuce and sliced tomatoes.

  3. **You can also add items like chopped olives, craisins, or nuts to the chickpea salad mix if desired. You could also substitute sweet pickle relish for dill pickle relish for a much tarter taste.
